Well, one evident reason is, that if He did, then justice would never be done. Rather justice would be infinitely delayed. Those who reject God could just keep on doing so, confident that they will never have to pay their just dessert. That would be an unjust world, inconsistent with God’s moral perfection.
The assumption of your question might be that if people had infinite time, then everyone would come freely to salvation. But I see no reason to think that that assumption is true. God may very well know that giving people more time wouldn’t do any good. It may well be the case that God in His providence and love does not permit anyone to die and be damned if He knows that prolonging that person’s life would result in his freely coming to salvation.
